Around the holidays and into the new year, our schedules are typically thrown out of wack! One way to help you feel like you have a method to the madness is making sure to prepare your lunches- one less thing to worry about. Here are a few options for easy lunches on the go! They’re fairly healthy, too.
BLT+A Wraps
Ingredients: 2 flour or wheat tortillas, 1 tbsp mayo, 4 strips of bacon, 1 large tomato, 1 avocado
Directions:
-Cook the bacon ahead of time and pack it in a Ziploc.
-Slice your tomato and avocado.
-Heat up your tortillas.
-Spread mayo on each tortilla and top with lettuce, tomato, bacon, and avocado.
-Enjoy!
Pesto Pasta
Ingredients: Pasta noodle of choice (use chickpea pasta for low-carb, GF), basil pesto sauce, cherry tomatoes, parmesan. Measure according to 1 serving pasta = 1-2 tbsp’s pesto.
Directions:
-Cook the pasta according to directions on the bag, we suggest spiral noodles!
-Drain and pour noodles into separate Tupperware to prep for the week.
-Cover each with 1-2 tablespoons of pesto sauce, according to taste.
-Add 3 sliced cherry tomatoes to each serving
-Top with parmesan
-Pack them up and reheat for lunch during the week!
Tuna Salad
Ingredients: 2 (5 oz) cans of tuna, ½ cup of mayo, 1 tbsp mustard, 1 tbsp red onion, ¼ cup diced pickles, ¼ cup diced red bell pepper, 1 avocado, salt & pepper to taste
Directions:
-Drain cans of tuna and scoop into mixing bowl
-Add mayo & mustard
-Add diced red onion, pickles, bell pepper, and avocado
-Salt & pepper to taste
-Serve on bread, over lettuce, or by itself with almonds and a boiled egg!
